Directions
In a pot, a small amount of shortening, only enough to keep chicken from sticking to pot.
Season chicken with salt and pepper. Fry chicken in pot until both sides are slightly golden.
Add enough water to barely cover chicken. When water begins to boil, reduce heat to a simmer. Cook for about an hour until the chicken is tender.
To make gravy, mix equal parts of corn starch and cold water. Add to water after chicken has cooked until thickened. Serve over mashed potatoes.
